The best countertop material for an outdoor BBQ island would be concrete or granite. Both materials are extremely dense, weather-hardy, and will last a long time in the outdoor environment.
The depth of your BBQ island can ultimately be pinned down to personal preference, but generally speaking, most islands are a bit deeper than your indoor kitchen cabinets. A good rule of thumb is to make your base BBQ island 28” deep, and countertops 32” deep. This will allow you enough space to install virtually any appliance you desire.
Yes, you can definitely build a BBQ island on pavers. However, there are a couple caveats. Outdoor kitchens are heavy structures, so you need to know if your pavers are strong enough to withstand the weight. In some cases, a structural footing is required to properly reinforce the patio.
Far and away, L-shaped outdoor kitchens are the most common design shape.
