brisket so next we got to trim this thing um before we even start trimming you have to understand the anatomy of a brisket so there’s really two different kinds of cuts on a brisket if you’re talking about a full Packer brisket so

if you go to the store and you’re going to buy a brisket make sure it says full Packer the full Packer is going to include the flat which is this kind of part of the meat it’s the thinner part and it runs all the way down here what’s sitting right on top of it is called the

point so the reason brisket is kind of the king of barbecue is because it’s actually really difficult to make a really good brisket the reason being is you’re trying to cook two different cuts of meat that are very different different at the same time the flat meat

the flat part of the uh brisket is a much leaner meat and has less intramuscular fat whereas the point has tons of intramuscular fat and it’s some of the best bites in barbecue it’s super
